The physicochemical property of phytosterols are mainly hydrophobic. Like animal cholesterol, phytosterol is also the basic component of plant cell membrane. The phytosterols obtained by solvent crystallization are usually needle-like or scaly white crystals, and their commercial products are mostly powder,granular or flakes.
